Borscht (Lena's)

Ingredients
  1. 4 cans of sliced beets (medium)
  2. 3 onions
  3. 1/2 cup of vinegar or white wine vinegar
  4. 1 cup of sugar
  5. 1 lb. of stewed beef (chunks)
  6. 2  lamb shanks (1 1/2 lbs.)
  7. 3 cloves of garlic - crushed
  8. 1 salt & pepper to taste
  9. 6 potatoes
  10. 1 small cabbage
  11. 1 can beef broth




Procedure/Direction:
In a large pot, fill pot with enough water to cover meat. Add salt & pepper.
Skim off crud as it appears.
Quarter potatoes and add to soup.
Quarter the cabbage and add to soup.
Quarter the onions and add to soup.
Add sugar, garlic, & white wine vinegar.
Cook 1 to 2 hours, adding beef broth when needed for moisture and cover with a vent.
